Zucchini Egg Scramble

This is the easiest concoction in the world to whip up, and even adds a few vegetables to your day, which Jamie Oliver and Dr. Oz would no doubt applaud.

If you’re cooking for only yourself, you know how much you eat, and you know the portions for vegetables and turkey are fairly small.  But this recipe is easily increased for a crowd.  It’s a great brunch item, something to make on a Sunday morning for company, for instance.  You can also substitute or add other favorite vegetables or fresh or leftover meats that your crowd loves.

This is also a great way to use leftover roasted turkey or chicken the next morning.  It’s a delicious way to serve the protein again, but in a different form and it doesn’t seem like leftovers at all.

My daughter used to say to me, “Oh, mom, you just can’t make plain eggs.”  And then she would smile with delight and devour the plate.

Start with raw ground turkey and chopped onion and brown/fry/saute in a little olive oil. When this is almost done, add the zucchini and finish cooking — just until the zucchini is crisp-tender.  Then add an egg per person and cook just until the eggs are set.

Serve on or with your favorite crusty bread, Ezekiel Sprouted Bread or Wheat Alternative Bread.  Unless, of course, you’re making fresh muffins…. :–).

You can always top the dish with any kind of grated cheese if you like, or sprinkle with feta and chopped tomatoes and parsley or basil or chives for color and the WOW factor.
